Lenggang (Fish Cake Omelette)

Lenggang is one of the authentic Palembang (South Sumatra) culinaries. It is basically Pempek (Palembangnese Fish Cake) mixed with egg and salt. To strengthen its flavour, when eating Lenggang it is a must to add Cuko (Spicy Sauce Dipping).
This is the recipes to make your own homemade Lenggang 🙌🏻:
Ingredients :
- Pempek (Palembangnese Fish Cake) - you can use any fish cake available in the supermarket
- Egg
- Salt
- Cuko
- Vegetable Oil
- Cucumber
How to make :
1. Cut Pempek into small pieces
2. Put 200 grams Pempek in the bowl
3. Add 3 eggs to the bowl of Pempek
4. Add 2 teaspoons of salt
5. Mix well until it blends altogether
6. Heat the frying pan until hot
7. Pour 3 tablespoons vegetable oil
8. Pour Lenggang Mixtures to the frying pan
9. Flip it when the bottom side of Lenggang shows golden brown colour
10. Wait until both of sides is perfectly cooked (Golden Brown colour)
11. Serve it in plate with cucumber that already been cut into smaller pieces.
12. Pour Cuko to seperate bowl for dipping; or just pour the Cuko over the Lenggang to make it more simple. ( I personally prefer to pour the Cuko directly to the Lenggang, in my opinion it is better to do that way )
